Happy Tuesday, friends!

I’m coming at you from Michigan this week! We’ll be up here this weekend to celebrate my good friends Hadley and Mike tying the knot, and Neal also happened to have meetings up here all week, so I tagged along for the ride!

(Side note: We’re currently in Grand Rapids, and then heading to Traverse City area, so let us know of any places we have to see!)

Anyway, transitioning to today’s topic: No-cook bites!

There’s still plenty of summer to enjoy before Fall rolls around. And who wants to be sweltering in the kitchen over an oven? Not me. I’d rather be outside drinking a glass of wine on my new balcony. (!) Did I mention I’m ecstatic about our new balcony?

I’ve been really into no-cook recipes lately. I think I can blame that on the weather finally feeling like summer. (You know, just in time for Fall!) There’s something about simple, fresh ingredients all coming together in the perfect snack.




So this weekend, bring one of these easy, fresh recipes to the party instead of your usual go-to, and get in and out of the kitchen in just a few minutes!

 





Buffalo Hummus

No Bake Buffalo Hummus

Now, let me tell you–hummus isn’t usually at the top of my list in terms of favorite snacks. I think the plain version tastes a bit like dirty socks. (Don’t hate me, hummus lovers!)

But a spicy flavorful version? That is something I can 100% get behind! Plus, Neal loves anything buffalo flavored, so I think this could be the perfect hummus for us. I’ll definitely be whipping up this one when we get back from our Michigan trip!


Herbed Veggie Dip

I made this dip a few weeks back for a girls picnic, and it turned out RIDICULOUSLY good. So much better than store-bought dip for hardly any effort. You can serve it with pita chips, veggies, crostini–the options are endless! (Get the recipe here!)


Quick Pickled Veggies

We drink a lot of Bloody Marys in our house, and nothing goes better with bloodies than pickled veggies. They also add a whole different element to veggie trays, and would taste delicious in that herbed dip I just told you about above 😉 Plus, they make an amazing hostess gift! Make a big batch and keep ’em in your fridge to have on hand–they’ll last for a month and only take 24 hours until they’re ready to pop in your mouth.

Anything with ridiculously fresh ingredients reminds me of the garden we had when I was growing up in Oregon. Had I posessed a more mature palate as a 6 year old, I’m pretty sure my mother would’ve whipped up something like this. The perfect post-farmers market, Saturday salad recipe!

This part salad-part snack recipe is sure to please just about everybody. Who doesn’t like a bit of crunch, about of creaminess, and a bit of sweet? It looks incredibly impressive, and only takes a few minutes to whip up.
